The almost extinct grape variety (listed by ProSpecieRara) is a mutation of the White Räuschling. The variety first appeared in the Middle Ages and was already very popular at that time.
At the Rebhalde winery, we make the Red Räuschling single-varietal. The vinification takes place in a tonamphora, a Spanish tinaja. Partly whole and crushed grapes remain in the amphora for ten months for maceration. The wine is aged entirely without the addition of sulfur.
On the nose, its incredible breadth emerges, each sniff promising a new experience. An incredible complexity that is confirmed on the palate and rewarded with a long finish.
- Grapes divided after harvest, 20% whole grapes put in amphora, 80% macerated
- fermented in the amphora and stored with the mash until August 2021
- pressing by hydropress, cooled storage in steel tanks until April 2022
- bottled in April 2022, followed by one year of aging in bottle
