Pinot Noir is the most important red wine variety on Lake Zurich and thus also on the Rebhalde organic vineyard. Documented as having been planted for the first time on Lake Zurich in 884, the variety has triumphed over the centuries. When people speak of Clevner or Blauburgunder, they always mean Pinot Noir.
This Pinot Noir is fermented by "macération carbonique" and, after rapid pressing, aged in amphora, a Spanish tinaja. A very light, fruity Pinot Noir that is a pleasure to drink both at aperitifs and meals.
- Grapes harvested in harvest boxes, gently treaded by foot according to the "stomp" method, fermented, pressed.
- after pressing, filled in amphorae for aging until July
- bottled in August 2023, followed by one year of aging in bottle
