Pinot Noir is the most important red wine variety on Lake Zurich and thus also on the Rebhalde organic vineyard. Documented as having been planted for the first time on Lake Zurich in 884, the variety has triumphed over the centuries. When one speaks of Clevner or Blauburgunder, one always means Pinot Noir.
The Lattenberger Pinot Noir Spätlese is a cuvée. It consists of different Pinot Noir parcels in the Lattenberg, which mature together in 2500-liter wooden barrels. The result is a powerful, broad Pinot Noir that begins to realize its full potential only after four to five years.
A deep food red wine with a variety of fruit components.

- consists of three different Pinot Noir clones and three different fermentation methods
- Pinot Noir Mariafeld: fermented according to "caviar" method, pressed directly after fermentation
- Pinot Noir 2/45: fermented according to "traditional" maceration, post-extracted at 20 degrees Celsius for seven days after fermentation, pressed
- Pinot Noir GM 20-13: grapes harvested in harvest boxes, gently trodden by foot according to "stomp" method, fermented, pressed
- stored in separate tanks, transferred in varying proportions to 2500-liter barrels for malolactic fermentation
- drawn off in July, sedimented, bottled in August 2023
